Kale

Kale is king! 
And it's one of the most nutritionally-dense plant foods in the world. That's why we love it so much!  We use curly kale in our salads. It's a member of the cabbage family and is related to broccoli and other leafy greens.
A single cup of kale contains 200% of your RDA of vitamin A, 134% of vitamin C and 680% of vitamin K! (1)

Vitamin K is awesome - not only is it essential for blood clotting, it also protects against heart disease and osteoporosis (2).

Kale has been proven to prevent and affect cancer cells thanks to the help of sulforaphane a key nutrient found in this awesome, little, green leaf (3, 4, 5, 6). 
Kale contains loads of really important minerals that many people lack in their modern diets. Two of these are magnesium and potassium: both have been linked to the prevention of heart disease, high blood pressure and type 2 diabetes (7), 

 

Basically, if you want to boost your nutrient intake, then kale is probably the healthiest thing you can eat on the planet. And that's why it's in the majority of our salads.
